Instructions
- In a medium bowl, whisk together the eggs, almond milk, maple syrup, vanilla extract, and melted butter until smooth and fully combined.
- Add the almond flour, baking powder, and salt. Stir well until a thick, cohesive batter forms. Let the batter rest for 2–3 minutes to allow it to thicken slightly.
- Preheat a non-stick skillet or griddle over medium-low heat. Lightly grease with butter or oil to prevent sticking.
- Scoop about 1/4 cup of batter per pancake onto the heated skillet. Gently spread into a circle if needed. Cook for 2–3 minutes until the edges look set and bubbles begin to form on the surface. Flip carefully and cook another 1–2 minutes until both sides are golden and cooked through.
- Transfer pancakes to a plate and serve hot with your favorite toppings such as fresh berries, a drizzle of maple syrup, or a spoonful of Greek yogurt.
