- 2 medium apples (Honeycrisp or Granny Smith), peeled, cored, and thinly sliced
- 1 tablespoon unsalted butter
- 1 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 1 pinch ground nutmeg (optional)
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract
- 4 large flour tortillas (8-inch size)
- 4 oz cream cheese, softened
- 1 tablespoon maple syrup or honey
- Optional: powdered sugar, fresh mint, vanilla yogurt, maple syrup for serving
Instructions
- Melt butter in a skillet over medium heat. Add apples, brown sugar, cinnamon, nutmeg, and lemon juice. Stir and cook for 8–10 minutes until apples are tender and slightly caramelized. Stir in vanilla and remove from heat.
- In a bowl, mix softened cream cheese with maple syrup or honey until smooth.
- Spread cream cheese mixture over one half of each tortilla. Add cooked apples on top. Fold tortillas in half to seal.
- Heat a skillet over medium heat. Toast folded quesadillas for 2–3 minutes per side, until golden brown and crisp.
- Slice into wedges and serve with toppings like powdered sugar, yogurt, or syrup.
