Description

These artisanal crackers with olive oil and rosemary are easy to make, rich in flavor, and perfect for any occasion.


Ingredients

  • 1 3/4 cups all-purpose white flour
  • 2/3 cups water
  • 1/4 cups good olive oil
  • 1/4 teaspoon kosher salt
  • 1 tablespoon chopped fresh rosemary
  • additional salt (sprinkle on top if desired)

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare the baking sheet by brushing with olive oil or lining with parchment paper.
  2. In a standing mixer with a dough hook or in a large mixing bowl, combine the all-purpose flour, water, olive oil, kosher salt, and chopped rosemary. Mix until it forms a dough, about 5 minutes.
  3. Form the dough into a smooth ball and cover it with a kitchen towel. Allow it to rest for 20 minutes.
  4. Roll the rested dough into a log and cut it into 8 even pieces. For smaller crackers, cut each piece in half.
  5. On a floured surface, roll each piece into a thin round, about 1/8 inch thick, and transfer to the baking sheet.
  6. Sprinkle the tops of the rolled crackers with additional salt if desired.
  7. Bake for 10-12 minutes or until the edges are golden brown.
