Description

Authentic Dum Mutton Biryani – Sinfully Spicy is a rich and aromatic Indian dish that brings together tender mutton and fragrant basmati rice, slow-cooked to perfection.


Ingredients

  • 2 lbs bone-in mutton (lamb) meat
  • 2 cups basmati rice
  • 3 medium onions, thinly sliced
  • 4 tbsp garlic-ginger paste
  • 1/4 cup plain yogurt
  • 1/4 tsp saffron threads soaked in 2 tbsp warm milk
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 4 green cardamom pods
  • 1/4 cup chopped cilantro leaves
  • 1/4 cup chopped mint leaves
  • 3 tbsp ghee or oil
  • Salt to taste

Instructions

  1. Marinate the mutton in yogurt, garlic-ginger paste, red chili powder, turmeric, salt, cumin, coriander powder, and chopped mint for at least two hours or overnight.
  2. Rinse the basmati rice until the water runs clear; soak for 30 minutes. Boil salted water and cook rice until two-thirds done; drain.
  3. In a pan, heat ghee/oil; caramelize sliced onions until golden brown (reserve half for garnishing).
  4. Add marinated mutton to the pan and sauté for about five minutes. Cover and simmer until tender (about one hour).
  5. Layer half of the cooked rice over the mutton; drizzle with saffron milk and sprinkle herbs. Top with remaining rice.
  6. Cover tightly and cook on low heat for 30 minutes to meld flavors.
