Instructions
- Mix crushed graham crackers with melted butter and sugar until evenly coated.
- Press 1 to 2 tablespoons of the crumb mixture into the bottom of each serving cup.
- Chill crust layers for a few minutes while preparing the filling.
- Beat softened cream cheese until smooth and fluffy.
- Add powdered sugar, vanilla extract, and lemon juice and blend until fully incorporated.
- Whip heavy cream to soft peaks and gently fold into the cream cheese mixture.

- Stir in the cornstarch mixture and simmer until slightly thickened, then cool.
