  • 1 cup heavy whipping cream
  • 1/3 cup powdered sugar

  • 1 tablespoon lemon juice
  • 1 1/2 cups fresh strawberries, chopped
  • 2 tablespoons sugar
  • 1 teaspoon lemon zest
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

Instructions

  1. Mix crushed graham crackers with melted butter and sugar until evenly coated.
  2. Press 1 to 2 tablespoons of the crumb mixture into the bottom of each serving cup.
  3. Chill crust layers for a few minutes while preparing the filling.
  4. Beat softened cream cheese until smooth and fluffy.
  5. Add powdered sugar, vanilla extract, and lemon juice and blend until fully incorporated.
  6. Whip heavy cream to soft peaks and gently fold into the cream cheese mixture.
  7. Spoon or pipe the cheesecake filling over chilled crusts and smooth the tops.
  8. Combine chopped strawberries, sugar, and lemon zest in a saucepan and warm until the fruit softens.
  9. Stir in the cornstarch mixture and simmer until slightly thickened, then cool.
