Ingredients

  • 1 medium butternut squash, peeled and diced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 8 ounces feta cheese, crumbled
  • ½ cup Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh dill, chopped (or parsley)
  • 2 cloves garlic, minced
  • Crackers or sliced baguette for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced butternut squash with olive oil, salt, pepper, smoked paprika, and garlic powder in a mixing bowl until evenly coated.
  3. Spread the seasoned squash on a baking sheet and roast for 25-30 minutes until tender and golden brown.
  4. Meanwhile, combine the crumbled feta cheese, Greek yogurt, lemon juice, chopped dill, and minced garlic in a food processor. Blend until smooth.
  5. Once the squash is roasted and slightly cooled, spread the feta dip on a serving platter and top with the roasted squash pieces.
