  • 2 tablespoons Olive Oil (or vegetable oil)
  • 1 cup Onions (chopped; shallots can be used)
  • 2 cloves Garlic (minced; garlic powder can be used as substitute)
  • 1 cup Celery (chopped; optional)
  • 1 teaspoon Thyme (fresh; dried can be used)
  • 1 cup Tomato Sauce (homemade or canned)
  • 2 tablespoons Worcestershire Sauce (or soy sauce as substitute)
  • 1 cup Beef Stock (or vegetable stock)
  • 2 tablespoons Cornflour (or arrowroot as alternative)
  • 1 cup Frozen Peas (or fresh peas)
  • 4 pieces Sweet Potatoes (or white potatoes)
  • 4 tablespoons Butter (or olive oil for dairy-free)
  • 1/2 cup Milk (almond or oat milk for dairy-free)
  • 1 cup Cheese (Tasty) (cheddar or vegan cheese)

Instructions

  1. Heat olive oil in a large frying pan over medium-high heat. Cook the sausages until browned on all sides, about 5 minutes, then slice and set aside.
  2. In the same pan, add onions, garlic, celery, and thyme. Sauté for 4-5 minutes until softened, then stir in the tomato sauce, Worcestershire sauce, stock, and cornflour mixture. Simmer until thickened, about 10 minutes. Add sausages and peas.
  3. Set your oven to 220°C (200°C fan-forced) so it’s ready when you’re assembled.
  4. Boil the sweet potatoes in a large saucepan until tender, about 15 minutes. Drain, then mash with butter, milk, and cheese. Season with salt and pepper to taste.
  5. Spoon the sausage mixture into a 9-cup ovenproof dish. Top with the creamy mashed sweet potatoes, swirling for texture, and sprinkle with remaining cheese.
  6. Place the assembled pie in the preheated oven and bake for 30-35 minutes until golden and bubbling.
