- 1 lb frozen tater tots
- 6–8 strips beef bacon, cooked crisp & crumbled
- 1 1/2 – 2 cups shredded cheddar cheese
- Salt & pepper, to taste
- 6–8 large eggs
- Thinly sliced green onions, for garnish
Instructions
- Preheat oven to 425°F (220°C). Arrange frozen tater tots in a single layer on a baking sheet. Bake for 20-25 minutes, flipping halfway, until golden brown and crispy.
- While tots are baking, cook beef bacon until crisp, then crumble. Set aside. Crack eggs into a bowl, whisk with salt and pepper, and set aside.
- Once tater tots are crisp, remove from oven and evenly sprinkle shredded cheddar cheese over the top. Return to oven for 1-2 minutes, or until cheese is melted and bubbly.
- In a skillet over medium-low heat, scramble the whisked eggs until cooked through but still moist. Season to taste.
- Transfer cheese-covered tater tots to a serving platter. Evenly distribute the scrambled eggs over the tots, followed by the crumbled beef bacon.
- Garnish generously with thinly sliced green onions. Serve immediately.
