- 2 pounds Stewing Beef (Cut into chunks)
- 4 slices Bacon (Diced)
- 1/4 cup Flour (For thickening)
- 1 bottle Red Wine (Dry red or non-alcoholic grape juice)
- 4 medium Carrots (Chopped)
- 2 stalks Celery (Chopped)
- 2 medium Leeks (Chopped)
- 8 ounces Mushrooms (Sliced, button or cremini)
- 2 tablespoons Butter (Or olive oil for dairy-free option)
- 2 teaspoons Herbs (Thyme, Bay Leaves) (Fresh or dried)
- to taste Salt & Pepper
- 2 medium Shallots (Sautéed)
- 2 tablespoons Cold Butter (Stirred in at the end)
Instructions
- Sauté bacon: Heat oil in a large, deep casserole dish and add diced bacon. Cook until crispy, then remove it and set aside.
- Brown the beef: In the same pan, add chunks of stewing beef. Sear until browned on all sides.
- Dust with flour: Toss all browned beef in flour. Cook for 2-3 minutes until slightly browned.
- Add aromatics: Add thyme and bay leaves with bacon, chopped carrots, celery, and leeks to the pan.
- Pour in wine: Gently pour red wine into the mix, sprinkle with salt and pepper, and bring to a gentle simmer.
- Slow cook: Cover and cook on low heat for 3 hours, stirring occasionally.
- Sauté mushrooms and shallots: In a separate pan, melt butter and sauté sliced mushrooms and shallots until browned. Add them to the slow cooker.
- Finish with butter: Stir in remaining cold butter right before serving.
