- 1 lb beef flank steak
- 2 tbsp olive oil
- 1 large onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 2 tsp cumin
- 2 tsp chili powder
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Juice of 2 limes
- Salt and pepper to taste
- 2 ripe avocados
- Fresh cilantro (optional)
Instructions
- Slice the beef flank steak against the grain into thin strips. Chop the bell peppers and onion into half-inch slices.
- In a bowl, mix olive oil, lime juice, cumin, chili powder, garlic powder, smoked paprika, salt, and pepper. Marinate the beef strips for at least 30 minutes.
- Heat a skillet over medium-high heat and add olive oil. Sauté onions for two minutes before adding bell peppers; cook until tender.
- Push vegetables aside and add marinated beef to the pan. Cook for about 5 to 7 minutes until browned.
- For guacamole, mash avocados in a bowl with lime juice and cilantro; season with salt.
- Assemble bowls with rice or quinoa as a base topped with beef mixture and guacamole.
