  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Juice of 2 limes
  • Salt and pepper to taste
  • 2 ripe avocados
  • Fresh cilantro (optional)

Instructions

  1. Slice the beef flank steak against the grain into thin strips. Chop the bell peppers and onion into half-inch slices.
  2. In a bowl, mix olive oil, lime juice, cumin, chili powder, garlic powder, smoked paprika, salt, and pepper. Marinate the beef strips for at least 30 minutes.
  3. Heat a skillet over medium-high heat and add olive oil. Sauté onions for two minutes before adding bell peppers; cook until tender.
  4. Push vegetables aside and add marinated beef to the pan. Cook for about 5 to 7 minutes until browned.
