Description

Ingredients

  • Chocolate Cake Layer (base):
    • 1 cup (125g) flour
    • ½ cup (50g) cocoa powder
    • 1 cup (200g) sugar
    • 1 tsp baking soda
    • ½ tsp baking powder
    • ½ tsp salt
    • 1 egg
    • ½ cup (120ml) milk
    • ¼ cup (60ml) oil
    • ½ cup (120ml) hot coffee or hot water
    • 1 tsp vanilla
  • Cheesecake Cream Layer:
    • 8 oz (225g) cream cheese, softened
    • ¼ cup (50g) sugar
    • 1 tsp vanilla
    • 1 ½ cups (360ml) heavy whipping cream
  • Chocolate Mousse Layer:
    • Option 1 – Quick: 2 boxes instant chocolate pudding, 3 cups cold milk
    • Option 2 – Rich mousse: 1 ½ cups heavy cream, 1 ½ cups chocolate chips, 1 tbsp butter
  • Cherry Filling:
    • 1 large can cherry pie filling
    • OR Homemade: 3 cups cherries (fresh or frozen), ½ cup sugar, 2 tbsp lemon juice, 1 tbsp cornstarch + 2 tbsp water
  • Whipped Cream Topping:
    • 1 ½ cups heavy cream
    • 3 tbsp powdered sugar
    • 1 tsp vanilla
  • Garnish:
    • Fresh cherries
    • Chocolate shavings

Instructions

  1. Prepare the Chocolate Cake Layer: Preheat oven to 350°F (175°C). Mix all dry ingredients. Add milk, egg, oil, vanilla. Mix in hot coffee last. Pour into a pan and bake 25–28 minutes. Cool completely and cut into chunks.
  2. Make the Cheesecake Cream Layer: Beat cream cheese, sugar, and vanilla until smooth. In another bowl, whip the heavy cream to stiff peaks. Fold whipped cream into cream cheese mixture and refrigerate.
  3. Prepare the Chocolate Mousse/Pudding Layer: For instant pudding, whisk pudding with cold milk and chill for 10 minutes. For rich mousse, heat cream until steaming, pour over chocolate chips and butter, stir until silky, and chill until thick.
  4. Cherry Layer: If using cherry pie filling, use directly. For homemade, cook cherries, sugar, and lemon until juicy, add cornstarch slurry, and cook until thick. Cool completely.
  5. Whipped Cream Topping: Beat cream, powdered sugar, and vanilla until fluffy.
  6. Assemble the Trifle: Use a large trifle dish or individual glass cups. Layer in this order: chocolate cake chunks, cherry filling, cheesecake cream layer, more chocolate cake, chocolate pudding/mousse, cherry filling, whipped cream, and top with chocolate shavings and fresh cherries. Repeat layers if your dish is tall.
