Description

Boursin mashed potatoes are creamy and flavorful thanks to the garlic and herb cheese.


Ingredients

  • 4 large russet potatoes (about 21/2 pounds), peeled and chopped into 2-in. cubes
  • 2 tablespoons unsalted butter, softened
  • 1/2 cup 2% milk, warmed
  • 1 package (5.2 ounces) Boursin garlic and fine herbs cheese
  • Salt and pepper to taste
  • 1 teaspoon minced chives, for garnish

Instructions

  1. Place the prepped potatoes in a large pot and add water to cover them. Bring the water to a boil. Reduce the heat to medium and cook the potatoes, uncovered, until they’re very tender, 15 to 20 minutes. Drain the potatoes and return them to the pot.
  2. Add the butter and mash the potatoes to your desired consistency. Fold in the warmed milk and Boursin cheese. Season them with salt and pepper to taste.
  3. Transfer the mashed potatoes to a serving dish, garnish them with fresh chopped herbs and serve.
