Instructions

  1. Preheat oven to 425°F (220°C). Toss potatoes with olive oil, salt, and pepper. Bake for 25–30 minutes, flipping halfway, until golden and crispy.
  2. Whisk egg yolks and lemon juice in a heatproof bowl over gently simmering water until thickened. Slowly drizzle in melted butter while whisking until smooth. Season with salt and optional cayenne. Keep warm.
  3. Prepare eggs to your preference—poached or fried eggs work best. Season lightly with salt and pepper.
