- 4 cups frozen or fresh breakfast potatoes or fries
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- 4 large eggs
- 3 large egg yolks
- ½ cup unsalted butter, melted
- 1 tablespoon lemon juice
- Salt, to taste
- Pinch of cayenne pepper (optional)
- Shredded cheese (cheddar or similar)
- Sautéed vegetables (bell peppers, mushrooms)
- Chopped green onions or fresh herbs
Instructions
- Preheat oven to 425°F (220°C). Toss potatoes with olive oil, salt, and pepper. Bake for 25–30 minutes, flipping halfway, until golden and crispy.
- Whisk egg yolks and lemon juice in a heatproof bowl over gently simmering water until thickened. Slowly drizzle in melted butter while whisking until smooth. Season with salt and optional cayenne. Keep warm.
- Prepare eggs to your preference—poached or fried eggs work best. Season lightly with salt and pepper.
- Place crispy potatoes on a serving platter or bowls. Add optional cheese or vegetables. Top with eggs and generously spoon hollandaise sauce over everything.
- Garnish with green onions or fresh herbs and enjoy while warm.
