  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  2. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Add the broccoli florets and broth to the pot. Bring to a simmer, then cover and cook for 10-15 minutes, or until the broccoli is tender.
  4. While the broccoli is cooking, prepare the roux. In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, until lightly golden.
