These Brownie Cookies are a rich, fudgy twist on classic cookies—crackly on the outside, gooey in the center, and topped with flaky sea salt.

- 170g dark chocolate (60-70%)
- 115g unsalted butter
- 100g granulated sugar
- 50g brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 50g all-purpose flour
- 20g unsweetened cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- Flaky sea salt, for topping
Instructions
- Melt the dark chocolate and butter together over a double boiler, stirring until smooth. Let it cool slightly.
- In a mixing bowl, whisk together the eggs, granulated sugar, and brown sugar for 3–5 minutes until thick and pale.
- Stir the melted chocolate mixture into the egg mixture, then add the vanilla extract and mix until combined.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Sift the dry ingredients into the wet mixture and fold gently until just combined.
- Let the batter rest at room temperature for 20–30 minutes to thicken.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop the batter into mounds and place on the baking sheet, spacing apart. Sprinkle flaky sea salt on each.
- Bake for 10–12 minutes, until the tops are crackled and the edges set.
- Cool on the baking sheet for 5–10 minutes before transferring to a wire rack.
