Quick and easy no-bake butterscotch haystack cookies made with just a handful of simple ingredients.

- 1 (11-ounce) bag butterscotch chips
- ½ cup creamy peanut butter
- 1 tablespoon unsalted butter
- 1 (5-ounce) can chow mein noodles
- 1 cup halved peanuts or cashews
- ½ teaspoon vanilla extract
- Pinch of salt (optional)
Instructions
- Line two baking sheets with parchment paper.
- In a medium saucepan set over low heat, combine the butterscotch chips, peanut butter, and butter.
- Stir constantly until the mixture is completely melted and smooth.
- Remove the saucepan from the heat and stir in the vanilla extract (and salt, if using).
- Gently fold in the chow mein noodles and halved nuts until everything is evenly coated.
- Drop spoonfuls of the mixture onto the prepared baking sheets.
- Let the haystacks set at room temperature until firm, or refrigerate for 10–15 minutes.
