Description

Quick and easy no-bake butterscotch haystack cookies made with just a handful of simple ingredients.


Ingredients

  • 1 (11-ounce) bag butterscotch chips
  • ½ cup creamy peanut butter
  • 1 tablespoon unsalted butter
  • 1 (5-ounce) can chow mein noodles
  • 1 cup halved peanuts or cashews
  • ½ teaspoon vanilla extract
  • Pinch of salt (optional)

Instructions

  1. Line two baking sheets with parchment paper.
  2. In a medium saucepan set over low heat, combine the butterscotch chips, peanut butter, and butter.
  3. Stir constantly until the mixture is completely melted and smooth.
  4. Remove the saucepan from the heat and stir in the vanilla extract (and salt, if using).
  5. Gently fold in the chow mein noodles and halved nuts until everything is evenly coated.
  6. Drop spoonfuls of the mixture onto the prepared baking sheets.
  7. Let the haystacks set at room temperature until firm, or refrigerate for 10–15 minutes.
