Instructions
- Preheat your oven to 400°F (200°C). Wash and peel the sweet potatoes, then cut them into cubes. Toss with olive oil, salt, and pepper.
- Spread the sweet potato cubes in a single layer on a baking sheet lined with parchment paper. Roast for 25-30 minutes, flipping halfway through.
- Coat chicken breasts with Cajun seasoning. Heat a skillet over medium-high heat, add olive oil, and cook chicken for 6-7 minutes per side until it reaches 165°F (74°C).
- Remove chicken from skillet and let it rest. Slice into strips. Prepare toppings by slicing avocado and any additional vegetables.
- In large bowls, create a base with roasted sweet potatoes, add sliced Cajun chicken, and top with avocado and vegetables.
- Serve warm, with a squeeze of lime or hot sauce if desired.
