Ingredients
- For the apple filling:
- 3 medium apples (Granny Smith or Honeycrisp), peeled, cored, diced
- 2 tablespoons unsalted butter
- ⅓ cup brown sugar
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon nutmeg
- Pinch of salt
- 1 tablespoon cornstarch mixed with 1 tablespoon water

- 2 refrigerated pie crusts
- 2 tablespoons melted butter

Instructions
- Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
- Cut pie crusts into circles and press into muffin tin wells. Brush with melted butter and sprinkle with sugar.
- Bake crusts for 10–12 minutes until golden brown. Let cool slightly.
- Melt butter in a skillet over medium heat. Add diced apples, brown sugar, granulated sugar, cinnamon, nutmeg, and salt. Cook until apples are softened.
- Stir in the cornstarch slurry and simmer until the apple mixture has thickened.
- Fill each baked crust cup with the warm apple mixture.
- Drizzle caramel sauce over the top of each caramel apple pie cup. Add whipped cream if desired.
- Serve warm.
