  • 4 slices Sandwich Bread
  • 1 tbsp Honey
  • 2 tbsp Mayonnaise (in a tube)
  • 2 Eggs
  • 4 tbsp Pancetta Bits
  • 1/4 cup Shredded Parmigiano Cheese

Instructions

  1. In a small bowl, combine equal parts room temperature unsalted butter and honey, mixing until smooth and creamy. Set aside.
  2. Preheat your broiler to high (around 550°F) and arrange a baking sheet with a cooling rack. Lay out the slices of bread on the rack.
  3. Spread the honey butter mixture over each slice of bread, ensuring every corner is coated.
  4. Pipe a border around the edges of each slice using mayonnaise to create a barrier for the egg.
  5. Crack one egg atop each slice of bread, gently placing it in the center of the mayonnaise barrier. Season with salt and pepper.
  6. Distribute the pancetta bits over each egg-topped slice and sprinkle a layer of shredded Parmigiano cheese on top.
  7. Place the baking sheet in the broiler and let it cook for 4-5 minutes, keeping a close eye on it.
  8. Once done, turn off the broiler and let the toasts sit for 2-3 minutes before serving.
