Description

Chaider is a versatile fall drink that is perfect for brunch or happy hour. You can enjoy it spiked or straight.


Ingredients

  • Homemade Chai:
    • 4 whole cloves
    • 2 whole peppercorns
    • 4 tea bags
    • 4 teaspoons sugar
    • 1/4 teaspoon ground ginger
    • 1 cinnamon stick (3 inches)
    • 21/2 cups water
  • Chaider:
    • 11/4 to 2 cups homemade or store-bought chai concentrate
    • 2 cups apple cider
    • Optional: Whipped cream, ground cinnamon, cinnamon sticks

Instructions

  1. Place the cloves and peppercorns in a medium saucepan and lightly crush them with a wooden spoon handle until their aromas are released. Add the tea bags, sugar, ginger, cinnamon stick and water, then bring everything to a boil. Remove the tea bags. Reduce the heat and simmer until the liquid reduces to about 2 cups, about 15 minutes.
  2. Strain the tea and discard the spices. Let the chai concentrate cool completely. Store in the refrigerator for up to three days.
  3. To make the chaider, combine your chai concentrate and apple cider in a small saucepan until heated through. Pour the mixture into mugs, and garnish with whipped cream and a sprinkle of cinnamon or cinnamon sticks.
