Description

Cheesecake Chocolate Brownies with a rich fudgy base and a creamy cheesecake layer.


Ingredients

  • 12 tbsp unsalted butter (cut into 12 pieces)
  • 4 oz semisweet or dark chocolate (coarsely chopped)
  • ½ cup unsweetened cocoa powder
  • 2 tsp espresso powder (optional)
  • ¾ cup granulated sugar
  • ¾ cup light brown sugar (firmly packed)
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 1 cup all-purpose flour
  • ½ cup semisweet chocolate chips
  • 1 tbsp boiling water
  • 16 oz full fat cream cheese (softened)
  • ½ cup granulated sugar
  • ¼ cup full-fat sour cream
  • 2 large eggs (lightly beaten)
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Line a 9×9” baking pan with parchment paper.
  3. Add salt and flour to a bowl and whisk to combine.
  4. Melt butter and chocolate in a bowl in the microwave.
  5. Add cocoa powder and espresso powder to the melted chocolate.
  6. Add granulated and light brown sugars to the mixture.
  7. Add eggs and vanilla, stirring to combine.
  8. Add flour mixture to the chocolate mixture and stir.
  9. Reserve ½ cup of brownie batter in a small bowl.
  10. Add chocolate chips to the batter and stir.
  11. Pour the remaining batter into the prepared baking pan.
  12. Bake for 15 minutes.
  13. Add cream cheese and granulated sugar to a bowl and beat until smooth.
  14. Reduce speed and add eggs one at a time.
  15. Add sour cream and vanilla, and beat to combine.
  16. Thin the reserved brownie batter with boiling water.
  17. Pour cheesecake batter over the brownie base.
  18. Add spoonfuls of reserved brownie batter and swirl through cheesecake.
  19. Bake for 25 minutes or until puffed around edges.
  20. Let cool completely on a wire rack.
  21. Refrigerate for 1 hour before slicing.
