Cheesecake Chocolate Brownies with a rich fudgy base and a creamy cheesecake layer.
Ingredients

- 12 tbsp unsalted butter (cut into 12 pieces)
- 4 oz semisweet or dark chocolate (coarsely chopped)
- ½ cup unsweetened cocoa powder
- 2 tsp espresso powder (optional)
- ¾ cup granulated sugar
- ¾ cup light brown sugar (firmly packed)
- 2 large eggs (room temperature)
- 1 tsp vanilla extract
- ½ tsp salt
- 1 cup all-purpose flour
- ½ cup semisweet chocolate chips
- 1 tbsp boiling water
- 16 oz full fat cream cheese (softened)
- ½ cup granulated sugar
- ¼ cup full-fat sour cream
- 2 large eggs (lightly beaten)
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350 degrees F.
- Line a 9×9” baking pan with parchment paper.
- Add salt and flour to a bowl and whisk to combine.
- Melt butter and chocolate in a bowl in the microwave.
- Add cocoa powder and espresso powder to the melted chocolate.
- Add granulated and light brown sugars to the mixture.
- Add eggs and vanilla, stirring to combine.
- Add flour mixture to the chocolate mixture and stir.
- Reserve ½ cup of brownie batter in a small bowl.
- Add chocolate chips to the batter and stir.
- Pour the remaining batter into the prepared baking pan.
- Bake for 15 minutes.
- Add cream cheese and granulated sugar to a bowl and beat until smooth.
- Reduce speed and add eggs one at a time.
- Add sour cream and vanilla, and beat to combine.
- Thin the reserved brownie batter with boiling water.
- Pour cheesecake batter over the brownie base.
- Add spoonfuls of reserved brownie batter and swirl through cheesecake.
- Bake for 25 minutes or until puffed around edges.
- Let cool completely on a wire rack.
- Refrigerate for 1 hour before slicing.
