- 1 (32-ounce) bag frozen hash brown potatoes
- 1 (10.5-ounce) can cream of chicken soup
- 1 cup sour cream
- 2 cups shredded cheddar cheese, divided
- 1/2 cup unsalted butter, melted
- 1/2 cup finely chopped onion
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups crushed cornflakes or potato chips (optional topping)
- 2 tablespoons melted butter (for topping)
- 2 tablespoons chopped chives or parsley (for garnish, optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with nonstick spray or butter.
- In a large mixing bowl, stir together frozen hash browns, cream of chicken soup, sour cream, chopped onion, 1 cup of cheddar cheese, melted butter, salt, and pepper until well combined.
- Spread the potato mixture evenly into the prepared baking dish.
- Sprinkle the remaining 1 cup of cheddar cheese evenly over the top.
- (Optional) If using a topping, mix the crushed cornflakes or chips with 2 tablespoons of melted butter and spread them over the cheese layer.
- Bake uncovered for 45–50 minutes, or until bubbly and golden brown around the edges.
- Remove from oven and let rest for 5–10 minutes. Garnish with chopped chives or parsley if desired.
- Serve warm and enjoy.
