Ingredients

  • 1 lb (450g) breakfast sausage (mild or spicy)
  • 6 large eggs
  • 1/2 cup (120 ml) milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups (226g) shredded cheddar cheese
  • 1 (32 oz) bag frozen tater tots
  • Optional: chopped green onions or bell peppers
  • Use hash browns instead of tots
  • Add jalapeños, mushrooms, spinach, or peppers
  • Swap sausage for ham or bacon
  • Top with mozzarella for extra cheesiness

Instructions

  1. Heat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Brown sausage in a skillet over medium heat. Drain excess fat.
  3. Whisk eggs, milk, salt, and pepper in a large bowl.
  4. Spread cooked sausage in baking dish. Top with 1 1/2 cups cheese. Pour egg mixture over the top. Arrange tater tots in a single layer.
  5. Bake uncovered for 45–50 minutes, until eggs are set and tots are golden.
  6. Sprinkle remaining cheese on top. Bake 5 more minutes to melt.
  7. Cool slightly, slice, and garnish with green onions.
