Hearty Tater Tot Sausage Breakfast Casserole you’ll crave every weekend.
Ingredients

- 1 lb (450g) breakfast sausage (mild or spicy)
- 6 large eggs
- 1/2 cup (120 ml) milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups (226g) shredded cheddar cheese
- 1 (32 oz) bag frozen tater tots
- Optional: chopped green onions or bell peppers
- Use hash browns instead of tots
- Add jalapeños, mushrooms, spinach, or peppers
- Swap sausage for ham or bacon
- Top with mozzarella for extra cheesiness
Instructions
- Heat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Brown sausage in a skillet over medium heat. Drain excess fat.
- Whisk eggs, milk, salt, and pepper in a large bowl.
- Spread cooked sausage in baking dish. Top with 1 1/2 cups cheese. Pour egg mixture over the top. Arrange tater tots in a single layer.
- Bake uncovered for 45–50 minutes, until eggs are set and tots are golden.
- Sprinkle remaining cheese on top. Bake 5 more minutes to melt.
- Cool slightly, slice, and garnish with green onions.
