  • 1 tablespoon unsalted butter, for pan-frying
  • For the Dijon Cream Sauce:
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth, low sodium
  • 1/2 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1/4 teaspoon black pepper, or to taste
  • Pinch of salt, if needed
  • For the Assembly:
  • 8 large (10-inch) flour tortillas
  • 1/2 lb thinly sliced deli ham
  • 1.5 cups shredded Swiss cheese, divided
  • 1 cup shredded mozzarella cheese, divided
  • 2 tablespoons unsalted butter, for cooking the quesadillas
  • Optional Garnish: Fresh chopped chives or parsley

Instructions
