- 2 cups diced chicken breast
- 3 cups cubed russet potatoes
- 2 cups broccoli florets
- 1 1/2 cups shredded cheddar cheese
- 1 can cream of chicken soup (10.5 oz)
- 1/2 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 400°F.
- Peel and dice the potatoes into small cubes, then toss them with olive oil, salt, and pepper.
- Spread the potatoes on a baking sheet and roast for 25 minutes or until golden and crispy.
- Meanwhile, dice the chicken breast and cook it in a skillet over medium heat until cooked through. Season with garlic powder and onion powder.
- Lightly steam the broccoli florets until tender but still vibrant.
- In a large bowl, combine the roasted potatoes, cooked chicken, steamed broccoli, cream of chicken soup, sour cream, and half the cheddar cheese.
- Mix everything thoroughly until well combined.
- Transfer the mixture into a greased 9×13-inch casserole dish.
- Sprinkle the remaining cheddar cheese evenly over the top.
- Bake at 375°F for 20–25 minutes, until the cheese is melted and bubbly.
