- 14 oz firm extra-firm tofu
- 2 ripe peaches
- 2 tbsp olive oil
- 3 tbsp fresh lime juice
- 2 tsp chili powder (adjust for heat)
- 1 tbsp honey or maple syrup
- Salt and pepper to taste
- Bamboo or metal skewers (8-10)
Instructions
- Drain and press the tofu between paper towels to remove excess moisture. Cut into 1-inch cubes.
- Slice the peaches into wedges that fit well on the skewers.
- In a bowl, whisk together olive oil, lime juice, chili powder, honey or maple syrup, salt, and pepper until combined.
- Marinate tofu cubes in one bowl and peach wedges in another with half of the marinade for 30 minutes.
- Preheat grill to medium-high heat. Thread marinated tofu and peach wedges onto skewers alternately.
- Grill skewers for about 10-12 minutes, turning occasionally until charred.
- Drizzle remaining marinade over skewers before serving.
