Best Chocolate Chocolate Chip Cookie Bars
Ingredients

- 2 cups all-purpose flour
- ½ cup cocoa powder
- 2 tsp baking powder
- ¼ teaspoon salt
- 2 large eggs (room temperature)
- ¼ cup creamy peanut butter
- 1 cup brown sugar
- ¼ cup granulated sugar
- 1 cup unsalted butter (melted)
- 2 tsp vanilla extract
- 2 cups milk chocolate chips (reserve ¼ cup for the topping)
Instructions
- Preheat oven to 350 degrees F.
- Line an 8 x 8-inch baking pan with parchment paper. Make sure the parchment overhangs on two sides for easy removal.
- Add the all-purpose flour, cocoa powder, baking powder, and salt to a large bowl. Whisk to combine.
- Add the eggs to the bowl of a stand mixer fitted with the paddle attachment and beat at high speed for 1 – 2 minutes until light and fluffy.
- Add in the peanut butter, melted butter, brown sugar, granulated sugar and vanilla to the bowl and mix until smooth.
- Add the dry ingredients to the bowl and mix until just combined.
- Add the chocolate chips and fold together just enough to distribute throughout the batter.
- Pour the dough into the prepared pan. Press it into the pan and level it with a spatula.
- Sprinkle the reserved chocolate chips over the top of the dough.
- Place the pan on the center rack of the preheated oven and bake for 20 – 25 minutes until the edges are set.
- Place the pan on a wire rack and let the bars cool in the pan for 20 mins.
- Remove the bars from the pan using the parchment paper and cut into squares.
Notes
- Store leftovers in an airtight container at room temperature.
- These bars can be frozen for up to 3 months.
