Instructions

- Add 1 egg, 1 teaspoon of vanilla extract, and ½ teaspoon of peppermint extract, mixing on low speed until combined.
- In a separate bowl, whisk together 1 cup of all-purpose flour, ⅓ cup of cocoa powder, ½ teaspoon of baking soda, and ¼ teaspoon of salt.
- Gradually add the dry ingredients to the wet mixture, blending at low speed until just combined.
- Use a cookie scoop to roll the dough into 1-inch balls and coat in granulated sugar.
- Bake for 8-9 minutes until set at the edges but still soft in the center.
- Allow cookies to cool for 2-3 minutes, then press a Hershey’s Peppermint Kiss into each warm cookie.
- Transfer to a wire rack to cool completely before serving.
