  • 2 store-bought Christmas Tree Cakes (crushed)
  • 4 oz cream cheese, softened
  • 4 tbsp unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • White chocolate drizzle
  • Holiday sprinkles
  • Additional green or red colored chocolate (optional)

Instructions

  1. Sift the almond flour and powdered sugar together into a bowl. Repeat at least twice to ensure a fine, lump-free mixture.
  2. In a clean bowl, add egg whites and cream of tartar. Mix until soft peaks form, then gradually add granulated sugar. Beat to stiff, glossy peaks. Add green gel food coloring.
  3. Add dry ingredients to the meringue and fold until batter flows like thick lava. It should form a figure “8” without breaking.
  4. Transfer batter to a piping bag with a round tip. Pipe small tree-shaped triangles onto a lined baking sheet. Tap sheet to release air bubbles and add sprinkles.
  5. Let shells rest 30–60 minutes until a skin forms and they don’t stick to your finger.
  6. Bake at 300°F (150°C) for 14–16 minutes. Cool completely before removing from the baking sheet.
  7. Beat cream cheese and butter until smooth. Add powdered sugar and vanilla. Fold in crushed Christmas Tree Cakes. Chill 20 minutes.
  8. Pair similar shells, pipe filling on one, gently press the second shell on top.
  9. Drizzle white chocolate over tops and add sprinkles for a festive look.
