  • 300g/10½oz self-raising flour
  • 1 tsp baking powder
  • 2 large free-range eggs
  • 350ml/12fl oz buttermilk
  • 1 tsp ground cinnamon
  • 1 heaped tsp vanilla bean paste
  • 45g/1½ oz caster sugar
  • 50g/1¾oz pecans, roughly chopped, plus extra to serve
  • Maple syrup, to serve (optional)
  • 50g/1¾oz soft brown sugar
  • 1 tbsp ground cinnamon
  • 65ml/4 tbsp maple syrup
  • 100g/3½oz cream cheese
  • 25g/1oz icing sugar, plus extra to serve
  • 1 tsp vanilla bean paste

Instructions

  1. Preheat your oven to 180°C (350°F) and lightly grease or line a rectangular baking dish or tray with parchment paper to prevent sticking.
  2. In a large bowl, sift together the self-raising flour and baking powder. In another bowl, whisk the eggs, then add the buttermilk, ground cinnamon, vanilla bean paste, and caster sugar. Gradually combine the wet ingredients with the dry ingredients, stirring gently until just mixed. Fold in the chopped pecans carefully to avoid overmixing.
  3. In a separate small bowl, combine the soft brown sugar, ground cinnamon, and maple syrup until well mixed. This will create the cinnamon swirl topping for the pancake batter.
  4. Pour half of the pancake batter evenly into the prepared baking dish. Drizzle half of the cinnamon swirl mixture on top in lines or blobs. Pour the remaining pancake batter over the top, then spoon and drizzle the remaining cinnamon swirl across the surface. Use a knife or skewer to gently swirl the cinnamon mixture into the batter for a marbled effect.
  5. Place the traybake in the preheated oven and bake for approximately 25-30 minutes, or until the pancake is cooked through and a skewer inserted into the center comes out clean. The top should be golden brown and slightly firm to the touch.
  6. While the traybake cools slightly, beat together the cream cheese, icing sugar, and vanilla bean paste in a bowl until smooth and creamy. Adjust the icing sugar quantity if you prefer a sweeter or thicker icing.
  7. Once the pancake traybake has cooled for about 10 minutes, spread or drizzle the cream cheese icing generously over the top. Sprinkle with extra icing sugar and pecans if desired. Serve warm with additional maple syrup on the side, if you like.
