 - 900 g bread flour
 - 560 g warm water
 - 20 g fine sea salt
 - ⅔ cup unsalted butter, softened

 - ½ cup chopped pecans or walnuts (optional)
 
Instructions
- Combine starter, flour, and water until no dry bits remain. Cover and rest for 30-45 minutes (autolyse). Add salt and fold until smooth.
 - Cover and let rise for 6-8 hours at room temperature (70-75°F). Perform stretch and folds every 30-60 minutes during the first 3 hours.
 - Turn out dough, divide in half, and roll each piece into a 10×15 inch rectangle.
 - Spread softened butter evenly, leaving a border. Sprinkle with cinnamon sugar mixture (and nuts if using).
 - Roll tightly from the long end, sealing the edge. Repeat with the second piece of dough.
 - Place seam-side up in floured bannetons or lined bowls. Cover. Option 1: Proof at room temperature for 2-4 hours. Option 2: Refrigerate overnight (8-16 hours) for enhanced flavor.
 - Preheat Dutch oven to 450°F for at least 45 minutes.
 - Flip one loaf onto parchment paper, score the top, and carefully transfer to the hot Dutch oven.
 - Bake covered for 20 minutes. Remove lid and bake for another 25-30 minutes until golden brown.
 - Repeat with the second loaf.
 - Let loaves cool completely on a wire rack for at least 2-3 hours before slicing.
