  • 8 ounces Cream Cheese, softened
  • 4 ounces Feta Cheese, crumbled
  • 1 cup Cranberries, fresh or dried
  • 1/4 cup Fresh Herbs (Parsley, Thyme, or Rosemary), finely chopped
  • 1 large Egg (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly flour a surface and unroll the puff pastry sheet. Gently roll it out into an even rectangle.
  2. In a medium bowl, combine the softened cream cheese and crumbled feta cheese. Mix until smooth. Fold in the finely chopped fresh herbs.
  3. Spread the cream cheese mixture evenly over the puff pastry, leaving a small border around the edges. Sprinkle the cranberries evenly over the filling.
  4. Starting from one long edge, tightly roll the puff pastry into a log.
  5. Use a sharp knife to slice the log into ½-inch thick pinwheels.
  6. Place the sliced pinwheels on a baking sheet lined with parchment paper, leaving space between them.
  7. Beat the egg and brush the tops of the pinwheels with the egg wash.
  8. Bake for 15-20 minutes, or until the pinwheels are puffed up and golden brown.
  9. Remove from the oven and let them cool slightly on a wire rack before serving.

Notes

  • These pinwheels can be made ahead and stored in an airtight container in the refrigerator for up to 3 days.
  • For longer storage, freeze uncooked pinwheels for up to 2 months. Bake directly from frozen, adding a few extra minutes to the baking time.
