Bright, creamy, and full of texture, this Cranberry Pasta Salad is perfect for quick lunches, easy dinners, or festive gatherings.

- 2 cups cooked farfalle pasta
- 2 cups cooked chicken breast, shredded or cubed
- 3/4 cup dried cranberries
- 1 cup chopped celery
- 1/2 cup chopped toasted pecans
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 1/2 cup poppy seed dressing (store-bought or homemade)
Instructions
- Bring a large pot of salted water to a boil. Cook farfalle pasta until al dente. Drain and rinse under cold water.
- Prepare chicken by cooking and chopping, or use pre-cooked chicken breast.
- Dice celery, chop green onions and parsley. Toast pecans and roughly chop.
- If making your own dressing: mix 1/2 cup Greek yogurt, 1 tbsp honey, 1 tbsp apple cider vinegar, 1/2 tsp Dijon mustard, and 1 tsp poppy seeds.
- In a large bowl, combine pasta, chicken, cranberries, celery, green onions, parsley, and pecans.
- Pour the dressing over and gently toss to coat.
- Cover and refrigerate for 30–60 minutes before serving.
