This Cream Cheese Crack Chicken Chili is an easy, creamy slow cooker recipe that’s packed with tender shredded chicken, hearty black beans, sweet corn, and the irresistible tang of ranch and cream cheese. It’s a comforting and flavorful meal perfect for busy weeknights or gatherings.
Ingredients
- 2 boneless, skinless chicken breasts
 - 1 (15 oz) can black beans, drained & rinsed
 - 1 (10 oz) can Rotel (diced tomatoes & green chilies, undrained)
 - 1 cup frozen corn
 - 1 (1 oz) packet ranch dressing mix
 - 1 tbsp chili powder
 - 1 tsp ground cumin
 - 1 (8 oz) block cream cheese
 - Optional toppings: shredded cheddar, green onions, jalapeños, tortilla chips
 
Instructions
- Place chicken breasts in the bottom of a 6-quart slow cooker.
 - Add drained black beans, undrained Rotel, frozen corn, ranch dressing mix, chili powder, and cumin.
 - Place the entire block of cream cheese on top of the other ingredients. Do not stir.
 - Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
 - Carefully remove the chicken breasts from the slow cooker.
 - Shred the chicken using two forks.
 - Return the shredded chicken to the slow cooker.
 - Stir everything together until the cream cheese is completely melted and the chili is creamy and well combined.
 - Serve hot with your favorite toppings.
 
Notes
- For a spicier chili, add extra diced green chiles or a dash of smoked paprika.
 - For a Buffalo twist, stir in 1/4 cup hot sauce and swap the ranch dressing mix for blue cheese dressing mix.
 - To lighten the dish, use reduced-fat cream cheese and add 1 cup of chicken broth for a soupier consistency.
 - For Instant Pot preparation, cook all ingredients (cream cheese on top) on High Pressure for 15 minutes, then quick release pressure, shred the chicken, and stir.
