Description

Ingredients

  • 2 lbs Russet Potatoes
  • 8 tbsp Salted Butter, melted
  • 8 oz Cream Cheese, softened
  • 1 cup Half and Half
  • 0.5 tsp Salt
  • Pepper, to taste
  • 2 tbsp Salted Butter, cold
  • Chives, for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and cube the russet potatoes. Place them in salted water and bring to a boil. Cook for about 10-15 minutes until fork-tender.
  3. Drain the potatoes and return to the pot over low heat for 3 minutes to remove excess moisture.
  4. Mash the potatoes in a bowl or stand mixer. Gradually add melted butter, cream cheese, and half-and-half until smooth with some pleasing lumps.
  5. Transfer the mixture to a greased 9×13 inch baking dish. Swirl the top and scatter cold butter cubes on top.
  6. Bake for about 45 minutes until golden on top and creamy inside.
