Description
This creamy Cajun chicken soup is a flavorful and comforting dish perfect for a chilly day. It’s packed with spice from Cajun seasoning and easy to make at home.
Ingredients
- 1 tablespoon olive oil
 - 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
 - 1 cup chopped yellow onion
 - 1 cup chopped green bell pepper
 - 1 cup chopped red bell pepper
 - 2 cloves garlic, minced
 - 1 teaspoon Cajun seasoning
 - 1/2 teaspoon smoked paprika
 - 1/4 teaspoon cayenne pepper (optional)
 - 4 cups chicken broth
 - 1 (14.5 ounce) can diced tomatoes, undrained
 - 1/2 cup heavy cream
 - 1/4 cup chopped fresh parsley
 - Salt and freshly ground black pepper to taste
 
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from the pot and set aside.
 - Add onion and bell peppers to the pot. Cook until softened, about 5-7 minutes.
 - Add minced garlic, Cajun seasoning, smoked paprika, and cayenne pepper (if using). Cook for 1 minute more until fragrant.
 - Pour in chicken broth and diced tomatoes. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
 - Return the chicken to the pot. Reduce heat to low, cover, and simmer for 15-20 minutes, or until chicken is cooked through and tender.
 - Stir in heavy cream and parsley. Cook for another 2-3 minutes until heated through, but do not boil.
 - Season with salt and pepper to taste. Serve hot.
 
Notes
- For a spicier soup, add more cayenne pepper.
 - You can substitute chicken breasts for chicken thighs.
 - This creamy Cajun chicken soup can be made ahead of time and reheated.
