Ingredients

  • 1 tablespoon unsalted butter (for greasing the dish)
  • 8 ounces Gruyère cheese (shredded)
  • 2.5 pounds Yukon Gold potatoes (peeled and sliced)
  • 3 cloves garlic (minced)
  • 2 cups heavy cream
  • 2 cups whole milk
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 0.5 teaspoon ground nutmeg
  • 2 pieces dried bay leaves (remember to remove)
  • 1 teaspoon fresh thyme leaves (for garnish)

Instructions

  1. Preheat the oven to 350°F and grease the baking dish with unsalted butter.
  2. Grate the Gruyère cheese and set aside.
  3. Peel and slice the Yukon Gold potatoes into 1/4-inch thick rounds, placing them in a pot.
  4. Mince the garlic and add it, along with heavy cream, whole milk, salt, pepper, nutmeg, and bay leaves to the pot.
  5. Bring the mixture to a simmer over medium heat for about 5 to 7 minutes until fork-tender.
  6. Layer half of the potatoes in the baking dish and sprinkle half of the cheese on top.
  7. Repeat with the remaining potatoes and top with cream mixture and remaining cheese.
  8. Bake for 40 to 45 minutes until golden brown and easily pierced with a knife.
  9. Garnish with fresh thyme leaves and let cool for 15 minutes before serving.
