- 4 large russet potatoes (peeled and cubed)
- 6 strips thick-cut bacon (chopped)
- 1 medium yellow onion (diced)
- 3 cloves garlic (minced)
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1½ cups sharp cheddar cheese (shredded)
- ½ cup sour cream (for topping)
- ¼ cup green onions (chopped for garnish)
Instructions
- In a large pot over medium heat, cook the chopped bacon until crispy. Remove from pot and set aside, leaving drippings.
- Sauté the diced onion in the bacon fat until translucent. Add minced garlic and cook for about 30 seconds.
- Add cubed potatoes and chicken broth to the pot; bring to a gentle boil. Reduce heat and simmer for 15-20 minutes until potatoes are fork-tender.
- Blend half of the soup using an immersion blender or standard blender until smooth, then return to pot.
- Stir in heavy cream and shredded cheddar cheese over low heat until melted and combined.
