  • 2 cups chicken broth
  • 1/2 teaspoon salt (for rice)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk

Instructions

  1. Cut chicken into 1-inch pieces. In a bowl, season chicken with garlic powder, onion powder, smoked paprika, salt, and black pepper. Toss to coat.
  2. Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken in a single layer; sear for 3-4 minutes per side until golden. Remove chicken and set aside.
  3. Rinse long-grain white rice under cold water until clear. In a medium saucepan, combine rinsed rice, chicken broth, and salt. Bring to a boil, then reduce heat to low, cover tightly, and simmer for 15 minutes. Remove from heat and let rest, covered, for 10 minutes. Fluff with a fork.
  4. In the same skillet, melt unsalted butter over medium heat. Sprinkle in all-purpose flour; cook, stirring, for 1-2 minutes to create a roux. Gradually whisk in whole milk until the sauce thickens and smooths. Season with salt and black pepper to taste.
  5. Return seared chicken to the sauce. Stir gently to coat. Bring to a gentle simmer, cover, and cook for 10-15 minutes until chicken is cooked through and tender, and flavors meld.
  6. Adjust sauce seasoning if needed. Serve creamy smothered chicken hot over the fluffy rice.
