Instructions
- Peel and grate the russet potatoes and onion. Aim for a fine grate to ensure even cooking.
- Transfer the grated mixture into a clean kitchen towel and squeeze out excess moisture.
- In a mixing bowl, combine drained mixture with flour, baking powder, salt, pepper, and egg. Mix gently.
- Heat oil in a skillet over medium-high heat until shimmering, about 375°F.
- Scoop tablespoons of the mixture into the hot oil, flatten into rounds, and fry for 3-4 minutes until golden brown.
- Transfer latkes to a paper towel-lined plate to drain excess oil and sprinkle with salt.
