- 5 large eggs
- 1/2 cup milk
- 1 cup shredded cheese
- 1 medium zucchini, thinly sliced or shredded
- 1 cup cherry tomatoes, halved
- 1/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 tablespoon chopped fresh parsley or basil
- Cooking spray or butter
Instructions
- Wash and prepare the zucchini and cherry tomatoes. Slice or shred the zucchini and halve the tomatoes. Pat dry with a paper towel.
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish with cooking spray or butter.
- Optional: Lightly sauté zucchini in olive oil for 2–3 minutes, then let cool.
- In a mixing bowl, whisk the eggs and milk until smooth. Add garlic powder, salt, pepper, and herbs. Stir in the cheese.
- Add zucchini and tomatoes to the egg mixture and stir gently. Pour into the greased dish.
- Bake for 30–35 minutes, or until the center is just set and the top is golden.
- Let the quiche rest for 5–10 minutes before slicing. Garnish with extra herbs and serve.
