Description

This Easy Beef Enchilada Soup is a cozy, one-pot dinner made with simple pantry ingredients and bold enchilada flavor.


Ingredients

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (10 oz) can red enchilada sauce
  • 2 cups beef broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, tortilla strips, chopped cilantro

Instructions

  1. In a large pot over medium heat, cook the ground beef and onion, breaking up the meat as it cooks, until the beef is browned and the onion is softened. Drain off any excess grease.
  2. Add the garlic and cook for about 1 minute, stirring, until fragrant.
  3. Stir in the black beans, corn, diced tomatoes, enchilada sauce, beef broth, chili powder, and cumin, mixing well to combine.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for 15 to 20 minutes.
  5. Taste and season with salt and pepper as needed.
  6. Serve hot with your favorite toppings, such as shredded cheese, tortilla strips, or fresh cilantro.
