Easy homemade pimento cheese spread, a classic Southern recipe perfect for sandwiches, appetizers, and holiday gatherings.
Ingredients

- 1 ½ cups sharp yellow cheddar cheese (8 ounces)
- 4 ounces pimento peppers (drained and chopped)
- ½ cup mayonnaise (or a mixture of sour cream, Greek yogurt and mayonnaise)
- ½ teaspoon salt
- 1 teaspoon pepper
- ½ teaspoon garlic powder
- ½ teaspoon cayenne pepper (optional – more or less to taste)
Instructions
- Pat the pimento pepper dry with a paper towel removing any excess liquid.
- Chop the pimento pepper into small chunks.
- Add the mayonnaise, sharp cheddar cheese, and pimento peppers to a large mixing bowl and stir together until well blended.
- Add the salt, black pepper, cayenne pepper (optional), and garlic powder to the mixture.
- Stir together until all seasonings are thoroughly combined with the cheese mixture.
- For best results, chill overnight in the fridge. At a minimum chill for at least one hour before serving.
Notes
- Serve with crackers, vegetables, or as a sandwich spread.
- Adjust cayenne pepper to your spice preference.
