    • ½ cup sour cream (for serving)
    • Fresh cilantro for garnish (optional)
    • Lettuce (for garnish, optional)

Instructions

  1. Heat the vegetable oil in a saucepan over medium heat. Add the chopped tomatoes, onions, and garlic, and sauté for 5-7 minutes, or until the tomatoes soften and release their juices. Add salt, pepper, oregano, and cilantro, then pour in the broth to thin the sauce. Simmer for 10-15 minutes and adjust seasoning to taste.
  2. In a frying pan, heat some vegetable oil over medium heat. Fry each corn tortilla for 20-30 seconds per side until soft. Drain excess oil on a paper towel to prevent sogginess.
  3. Dip each tortilla into the tomato sauce, coating both sides. Fill with cheese, shredded chicken, or other fillings. Roll up the tortilla and place it seam-side down in a baking dish. Repeat with remaining tortillas.
  4. For a slightly crispy version, bake the filled entomatadas in a 350°F (175°C) oven for 10-15 minutes until the cheese is melted and the sauce is bubbling.
  5. Garnish with sour cream, fresh cilantro, and lettuce. Serve with a side of rice, beans, or a salad for a complete meal.
