- For the Entomatadas:
- 8 corn tortillas (softened by briefly frying or warming)
- 1 ½ cups shredded cheese (queso fresco, Monterey Jack, or any cheese you prefer)
- 1 cup cooked shredded chicken (optional)
- ½ cup sour cream (for serving)
- Fresh cilantro for garnish (optional)
- Lettuce (for garnish, optional)
Instructions
- Heat the vegetable oil in a saucepan over medium heat. Add the chopped tomatoes, onions, and garlic, and sauté for 5-7 minutes, or until the tomatoes soften and release their juices. Add salt, pepper, oregano, and cilantro, then pour in the broth to thin the sauce. Simmer for 10-15 minutes and adjust seasoning to taste.
- In a frying pan, heat some vegetable oil over medium heat. Fry each corn tortilla for 20-30 seconds per side until soft. Drain excess oil on a paper towel to prevent sogginess.
- Dip each tortilla into the tomato sauce, coating both sides. Fill with cheese, shredded chicken, or other fillings. Roll up the tortilla and place it seam-side down in a baking dish. Repeat with remaining tortillas.
- For a slightly crispy version, bake the filled entomatadas in a 350°F (175°C) oven for 10-15 minutes until the cheese is melted and the sauce is bubbling.
- Garnish with sour cream, fresh cilantro, and lettuce. Serve with a side of rice, beans, or a salad for a complete meal.
