  • 2 everything bagels
  • 1 cup sweet potatoes, peeled and cubed
  • 2 tbsp tahini
  • 2 tbsp toasted sesame or pumpkin seeds
  • 1 tbsp extra virgin olive oil
  • Salt to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss cubed sweet potatoes in olive oil and salt; spread on a baking sheet.
  2. Roast for 25-30 minutes until tender and caramelized.
  3. Mash roasted sweet potatoes in a bowl; stir in tahini and adjust seasoning.
