- 1 cup sweet potatoes, peeled and cubed
- 2 tbsp tahini
- 2 tbsp toasted sesame or pumpkin seeds
- 1 tbsp extra virgin olive oil
- Salt to taste
Instructions
- Preheat oven to 400°F (200°C). Toss cubed sweet potatoes in olive oil and salt; spread on a baking sheet.
- Roast for 25-30 minutes until tender and caramelized.
- Mash roasted sweet potatoes in a bowl; stir in tahini and adjust seasoning.
- Toast bagels until golden brown.
- Spread the sweet potato mash on each bagel half. Top with toasted seeds and drizzle with olive oil.
