Description
Custard-style flourless apple cake with Greek yogurt and sweet cinnamon apples. Naturally gluten-free, low calorie, and high in protein.
Ingredients

- 2 cups thick Greek Yogurt
- 5 eggs
- ½ cup cornstarch
- ½ cup powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
- 1 medium apple (cored, peeled and thinly sliced)
- 1 tsp cinnamon
- 1 tsp powdered sugar
- ¼ cup walnuts (finely chopped)
Instructions
- Preheat the oven to 350F. Line an 8-inch cake pan with parchment paper.
- In a large bowl, whisk together Greek yogurt and eggs, add in cornstarch, powdered sugar, vanilla extract, and a pinch of salt, and whisk some more.
- In a bowl, cover sliced apples with cinnamon and powdered sugar.
- Pour the batter into the cake form and cover with apples.
- Bake in the oven for 60 minutes, then let it cool for another 2 hours before serving. Optionally, sprinkle with walnuts.
