Description

Ingredients

  • 1 cup rolled oats (divided)
  • 1 tbsp chia seeds
  • 1 large apple (peeled and chopped)
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 3 tbsp Greek yogurt
  • 2 medium eggs
  • 1 tbsp butter or coconut oil

Instructions

  1. Preheat the oven to 350F. Line a 9’’x5’’ loaf pan with parchment paper.
  2. Put in ¾ cup rolled oats and the rest of the ingredients into a food processor.
  3. Process until smooth, and then mix in the remaining ¼ cup of oats.
  4. Pour the batter into the loaf pan and bake in the oven for 35-40 minutes.
  5. Remove from the oven and let the cake cool off. Let the cake cool down for about an hour.
  6. Once the cake cools down, slice it into 8-10 rectangular slices.
