Description

  • 2 tablespoons olive oil
  • 56 large yellow onions, thinly sliced
  • 1 teaspoon sugar (optional)
  • 4 cloves garlic, minced
  • 8 cups beef or vegetable broth
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and freshly ground black pepper, to taste
  • 1 baguette, sliced into 1/2-inch rounds
  • 2 cups shredded Gruyère cheese (or Swiss, Emmental, or mozzarella)

Instructions

  1. In a large pot, melt butter with olive oil over medium heat. Add sliced onions and cook, stirring occasionally, for 30-40 minutes until golden brown and jammy. Add garlic during the last 2 minutes.
  2. Sprinkle onions with sugar if desired. Add broth, thyme, and bay leaves. Bring to a boil, then reduce to a simmer. Cover and cook for 20-25 minutes. Remove bay leaves and season with salt and pepper.
  3. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and toast for 8-10 minutes.
  4. Top toasted bread slices with shredded Gruyère cheese. Return to the oven and bake until cheese is melted and bubbling, about 5 minutes.
  5. Ladle hot soup into oven-safe bowls. Place one or two cheese toasts on top and serve immediately. For a broiled finish, place bowls under the broiler until cheese bubbles and browns.
