Description

  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 6 cups beef broth
  • 1/2 cup dry white wine (optional)
  • 34 sprigs fresh thyme
  • 1 bay leaf
  • 1 1/2 teaspoons salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1 French baguette, sliced into 1/2-inch rounds
  • 1 1/2 cups grated Gruyère cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F and prepare the broiler.
  2. In a large pot, heat butter and olive oil over medium heat. Add onions and cook slowly, stirring often, for about 35 minutes until deeply caramelized.
  3. Deglaze with wine or vinegar, scraping the pot. Add broth, thyme, bay leaf, salt, and pepper. Simmer for 20 minutes, then remove herbs.
  4. Toast baguette slices in the oven until golden.
  5. Ladle soup into broiler-safe bowls, top each with toasted bread and a heap of grated cheese.
  6. Broil until the cheese is bubbly and golden, about 2–4 minutes.
  7. Garnish with parsley and serve hot.
