  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt, plus more to taste
  • ¼ teaspoon ground black pepper, plus more to taste
  • Freshly chopped parsley, for topping

Instructions

  1. Start by cutting the Yukon Gold potatoes and sirloin steak into ½ inch cubes. Mince the garlic cloves and chop the parsley for garnish.
  2. Place a large cast iron skillet over medium heat. Add the olive oil and two tablespoons of ghee to the skillet, allowing it to melt and heat evenly.
  3. Once the ghee has melted, add the cubed potatoes to the skillet. Sprinkle minced garlic, dried thyme, dried oregano, salt, and black pepper evenly over the potatoes. Cook the potatoes for 2-3 minutes before stirring to start the browning process.
  4. Continue cooking the potatoes, stirring every 1-2 minutes to prevent sticking and ensure even browning. Cook until the potatoes turn golden brown and are fork-tender, approximately 8-10 minutes. Remove the potatoes and the flavorful browned bits from the pan and set aside.
  5. Increase the skillet heat to medium-high. Add the remaining two tablespoons of ghee and allow it to melt. Add the cubed steak pieces to the pan. Season with salt and pepper. Let the steak sear undisturbed for at least 2 minutes to develop a good crust before stirring. Stir and continue to cook until the steak pieces are golden brown on all sides, about 1-2 more minutes.
  6. Return the cooked potatoes and any browned bits back to the skillet with the steak. Stir everything to combine well. Adjust seasoning with additional salt and pepper to taste.
